Gamja Jorim (Korean Braised Potatoes)

Ingredients
1 1/2 pounds Potatoes (peeled & cut into 1 inch cubes)
1 Carrot (peeled and cut into large pieces)
2 or 3 Green chili peppers (cut into large pieces)
OR 1/2 of a bell pepper (cut into large pieces)
1/4 of an Onion (peeled and cut into large pieces)
1 Cooking oil
FOR THE BRAISING LIQUID:
3 tablespoons Soy sauce
1 tablespoon Sugar
1 tablespoon Rice wine (or mirin)
1 tablespoon Corn syrup (or oilgodang)
1 teaspoon Minced garlic
1/8 teaspoon Pepper
3/4 cup Water
1 teaspoon Sesame oil
1/2 teaspoon Roasted sesame seeds

Step by Step Instructions
  1. Mix all of the ingredients in the "braising liquid" section except for the sesame oil and seeds together in a bowl. Stir well, then set the mixture aside.
  2. Saute the potatoes in the cooking oil a non-stick pot or pan over medium heat for 4 to 5 minutes.
  3. Add the sauce and bring the mixture to a boil over high heat. Add the carrot, cover, and lower the heat to medium. Let cook for 5 to 6 minutes.
  4. Add the pepper and onion, then bring to a boil again and let cook uncovered for 3 minutes. Stir in the sesame oil and roasted sesame seeds, then serve.
